WineFairy chats with Anupy Singla on Vegan Indian Cooking; Becky Sue Epstein on Franciacorta; and with Richard Leahy on Virgina Wines

Segment-1: Food & Cooking - Indian Food With An American Flair! Vegan Indian Cooking: 140 Simple and Healthy Vegan Recipes - Anupy Singla

01: Vegan Indian Cooking: 140 Simple and Healthy Vegan Recipes by Anupy Singla boasts nearly 150 of Singla’s healthy and delicious recipes. Vegan cooking has exploded in popularity over the last few years, as people seek out healthier, more responsible eating choices. Singla has adapted some of the most popular and familiar Indian recipes using strictly vegan ingredients without sacrificing any of the taste that lovers of Indian food expect. The result is a beautiful cookbook, full of gorgeous color photography, featuring healthful, richly flavored recipes. Whenever she wants to 'spike' her Indian meal with a fun cocktail, she starts with a Lassi traditional drink made with yogurt. She mixes mango puree, frozen mango, yogurt (regular plain or soy), a touch of lime, black salt, and black pepper, along with some vodka (vanilla vodka works really well). Blend together and you have a great starter to any Indian meal.

Segment-2: Wine Regions - Franciacorta Region of Lombardy Serves Classic Brut and Amazing Food in Bucolic Setting - Becky Sue Epstein

02: Franciacorta was the first Italian sparkling wine produced exclusively by the Classic Method, or second fermentation in the bottle, to win, in 1995, official status as a Denominazione di Origine Controllata e Garantita (DOCG). Today, the front label on the wine reads simply “Franciacorta”: this one term defines the growing area, the production method, and the wine. All of Europe boasts only 10 such privileged wines, and only three of them are made by refermentation in the bottle, Cava, Champagne, and Franciacorta. The area’s venerable wine cellars, which today have transformed themselves into cathedrals of modern winemaking technology, proudly produce the four categories of Franciacorta sparkling wines, Millesimato, Rosé, Satèn, and Riserva. Becky Sue Epstein, international editor and author, writes about wine, spirits, food and travel.

Segment-4: Wine Books - Learn Why Virginia Wine Has Never Been Hotter in Beyond Jefferson’s Vines - Richard G. Leahy

04: Beyond Jefferson’s Vines: The Evolution of Quality Wine in Virginia by Richard G. Leahy gives you an insider’s tour of the Virginia wine region, from its early days when Thomas Jefferson established his vineyard at Monticello to a place where yet another new revolution is brewing today—that of great wine. It focuses on the last thirty years but also sheds light on previously unexamined chapters of the eighteenth-century Virginia wine experiment. You’ll see the vast diversity of Virginia wine, from large wineries to brands without wineries that hire custom-crush facilities to make the wine for them.
