Ethan Kelley, Spirit Sommelier, Brandy Library of New York, NY, participated in the Second International Cognac Summit, hosted earlier this year by the Bureau National Interprofesionnel du Cognac (BNIC). The format of the Cognac Aroma Wheel differs from other versions in that it categorizes aromas by seasons. Cognac's subtle floral notes recall spring, while its headier notes of apricots, citrus and exotic fruit conjure up a warm summer's day. Autumn's cool mists are reflected in the spicier notes of ginger, liquorice, vanilla and caramel, followed by the powerful wintry scents of coffee, tobacco, toast, cedar and sandalwood. Segment-2: Explore Cooking with and Pairing Cognac with Food this Holiday Season - Allen Katz

Allen Katz is the Director of Mixology & Spirits Education for Southern Wine & Sprits of New York. He lectures on spirits and mixology for the Wine & Spirits Education Trust (WSET) in New York City as well as for the Food Studies Program at New York University. The holidays are a great time to explore the many aromas of Cognac. Whether mixing Cognac in cocktails as an aperitif, or serving it as a digestif with dessert, the diverse flavors of Cognac make it an ideal match for many holiday foods, including smoked salmon, foie gras, scallops, creme brulee and gingerbread. Its aromas also add complexity and depth to cooked dishes, from turkey gravy, to meat terrines and chocolate truffles.

Segment-4: Pot Distilled Hangar One Spiced Pear Vodka combines St. George Spirits Pear Eau de Vie - Lance Winters

Made only once a year and in very limited batches, Hangar One Spiced Pear Vodka is a select blend of pot-distilled Hanger One American Vodka, and St. George Spirits aromatic pear Eau de Vie, fresh pear juices and distillates of assorted spices. The vodka enters the palate like a pear tart, soft, warm and buttery with lots of sweet and bright pear. The mid-palate suggests the rich fullness of caramelized pear juice dripping down the side of a pie pan. It finishes with the lingering woody, spicy, and deep essences of a lovely Calvados. Pear Today, Gone Tomorrow: 2 oz. Hangar One Spiced Pear Vodka + 1 oz. fresh apple juice or cider + 1/2 oz fresh lemon juice + 1/4 oz agave nectar + 2-inch piece of celery. Muddle celery with lemon juice. Add remaining ingredients. Shake and strain into a martini glass. Garnish with pear slice.
