Peggy O'Kelly, President, St. Helena Olive Oil Company has been living in Florence, Italy since the end of December 2008 with her two teenage daughters.... immersing themselves in the Italian way of life. Of course she is cooking up a storm, providing recipes on her active blog while in situ, studying olive oil and balsamic vinegar, communing with her suppliers, growers, and meeting new ones and generally absorbing everything she can to bring back to Napa and apply that knowledge to the estate olive grove management and production back home.

Whether it is using less oak in the Chardonnay to protect the tropical characters or fermenting Pinot Noir only in open-top fermenters to respect the silky tannins of the Pinnacles Vineyard. “When I make a blend, I try and imagine how it will pair with food or how the acid balance will create a different sensation when enjoyed with a particular dish—to me that is fascinating!”
