2006 Chardonnay Sleepy Hollow Vineyard

A rich, fuller style Chardonnay with aromas of honey, pear, toasted oak, butter, roasted almond and subtle vanilla. The color is rich yellow-gold and the flavors are smooth and mouth-filling with lemony fruit, honey, baked apple, warm French oak, vanilla and toast. The balanced, acid-supported finish shows supple tannin to compliment poultry and white-meat entrees, seafood, and cream-sauced pasta dishes. A rich and stylish chardonnay ready to enjoy now.

The Seawind 2006 Sleepy Hollow Vineyard Chardonnay is a blend of new oak and stainless-fermented juice giving the finished wine a rich and creamy character with a solid acid backbone and finish. The fruit was gently whole-cluster pressed and the juice was settled overnight before being transferred to barrel ferment in a combination of new Daraguad & Jaegle French oak and stainless steel. The juice was inoculated with yeast and fermented cool, then aged sur lie with occasional stirring for 7 months before blending. Malolactic fermentation was allowed to finish in the oak-fermented wine and did not occur in the stainless-fermented wine. The final blend included 12% stainless-fermented wine which adds a vibrant crispness to the finished cuvee.
